0.75 cup fresh diced pineapple , finely chopped
0.25 cup fresh chopped red onion , finely chopped
1 tbsp sliced jalapeno pepper , minced and seeded
1 tbsp fresh cilantro , chopped
1 tbsp cider vinegar
0.25 oz honey
1 oz fresh mint , chopped
2 tbsp fresh lime juice
0.25 tsp salt
0.25 tsp chili powder
24 large raw shrimp , peeled and deveined (about 1 1/2 pounds)
1 cooking spray
4 pinch fresh cilantro (optional)


Directions
1 Preheat grill.
2 Mix pineapple, red onion, pepper, cilantro, vinegar, and honey in a bowl and reserve.
3 Whisk together mint, lime juice, salt, and chili powder. Toss in shrimp. Thread 3 shrimp on each of 8 skewers. Arrange shrimp on a cooking spray coated grill rack and grill 1 1/2 minutes per side. Serve with salsa and top with cilantro sprigs.
Additional Information
Buy peeled, cored fresh pineapple for the salsa. Enjoy the rest of it in a fresh fruit salad.
