Servings
Ingredients
1 cup orzo pasta (about 7 oz)
8 oz cooked shrimp , peeled and deveined
0.25 cup chopped scallions , finely chopped
0.25 cup fresh chopped celery , finely chopped
1.5 tbsp fresh dill weed , finely chopped (or 1 1/2 - 2 tsp dried dill)
0.5 cup light mayonnaise
2 tsp fresh lemon juice
1 pinch white pepper


Directions
1 Cook the orzo according to the package directions. Drain, rinse under cool water, and drain again.
2 Add the orzo to a large bowl, along with the shrimp, scallions, celery, and dill. Toss to mix.
3 Stir the dressing ingredients together in a small bowl.
4 Toss the dressing mixture with the orzo mixture, mixing well.
5 Cover and refrigerate for a minimum of 2 hours prior to serving. If the mixture seems too dry, stir in a little more mayonnaise.
6 If desired, serve on a bed of mixed salad greens.
Additional Information
Substitute salmon or crab meat for the shrimp, for variety.
