1 Cook the orzo according to the package directions. Drain, rinse under cool water, and drain again. 2 Add the orzo to a large bowl, along with the shrimp, scallions, celery, and dill. Toss to mix. 3 Stir the dressing ingredients together in a small bowl. 4 Toss the dressing mixture with the orzo mixture, mixing well. 5 Cover and refrigerate for a minimum of 2 hours prior to serving. If the mixture seems too dry, stir in a little more mayonnaise. 6 If desired, serve on a bed of mixed salad greens.
Additional Information
Substitute salmon or crab meat for the shrimp, for variety.
