Servings
Ingredients
1 tsp vegetable oil
0.5 cup fresh chopped onion
0.5 cup fresh chopped celery
0.5 tsp salt
1.5 tsp fresh thyme , chopped (or 1/2 tsp dried thyme)
0.25 tsp black pepper
2 tbsp red wine (dry)
14.5 oz canned unsalted diced tomatoes
6 oz raw medium shrimp , peeled and deveined
6 oz raw halibut fillets , cut into bit size pieces


Directions
1 Heat oil over medium high heat until hot.
2 Add in the onion, celery, salt, thyme, and pepper, cook 5 minutes.
3 Add in the wine and tomatoes and bring to a boil.
4 Lower heat and simmer, uncovered for 5 minutes.
5 Add in the shrimp and halibut, cover and simmer another 5 minutes or until shrimp turns pink and halibut flakes easily with a fork. Serve immediately.
Additional Information
You can also use scallops.
