Ingredients
1 cup cooking sherry (dry)
3 cup low fat unsalted chicken broth
3 tbsp white all purpose flour
3 tbsp Butter, unsalted (optional)
0.5 tsp salt
0.25 tsp black pepper , freshly ground


Directions
1 Pour sherry into a pot and heat over high heat 5 minutes, mixture will be reduced to half.
2 Whisk together broth and flour and pour into pot. Whisking continually, let boil. Lower heat to medium and simmer 10 minutes, whisking often.
3 Stir in butter, if using. Season with salt and pepper.


Additional Information
Be careful when heating sherry, it may flame up. This gravy goes great with turkey.
