Ingredients
1 tsp olive oil
0.5 cup shallots, chopped
2 cup grapefruit juice , fresh (about 3 grapefruits)
2 tbsp fresh cilantro , chopped
2 tsp sugar
0.25 tsp black pepper , freshly ground
2 tbsp olive oil


Directions
1 Pour oil in a frying pan over medium heat. Saute shallots 5 minutes.
2 Pour in grapefruit juice and let boil over medium high heat. Cook until liquid is reduced to 1 cup, about 6 minutes. Take mixture off of heat and let cool.
3 Using a food processor or blender, puree juice mixture with cilantro, sugar, and pepper until smooth.
4 With motor running, slowly drizzle in olive oil and blend until fully combined.
Additional Information
Drizzle this dressing over mixed salad greens topped with goat cheese and roasted corn. Squeeze your own grapefruit juice or look for fresh grapefruit juice in the produce section of the grocery store.
