Ingredients
1 lb extra lean ground beef (5% fat)
1 tsp seasoned salt (like Lawry's)
0.5 tsp italian seasoning
0.5 tsp black pepper , freshly ground
4 small potatoes , unpeeled and thinly sliced (red)
0.25 cup fresh chopped celery
1 medium onions , sliced
1 medium red bell peppers , sliced
15 oz Tomatoes, crushed, Italian recipe, canned , undrained
0.5 cup shredded mozzarella cheese


Directions
1 Preheat oven to 350 degrees F.
2 In a large ovenproof skillet, cook the beef over medium heat until crumbly and just barely pink, breaking up the meat with a spoon.
3 Drain off any excess fat.
4 Sprinkle the beef with the seasoning salt, Italian seasoning, and pepper.
5 Layer the potatoes, celery, onion, and red pepper over the beef. Pour the tomatoes evenly over the top.
6 Cover and bake until the potatoes are tender, approximately 40 minutes.
7 Preheat the broiler.
8 Sprinkle the cheese evenly over the vegetables and broil until the cheese is bubbly and lightly browned, about 2 minutes.
9 Serve in the skillet, scooping out portions with a large spoon.
