Ingredients
1 Cucumber, with skin, fresh, 8 1/4" long , julienne cut
0.25 tsp kosher salt
1 medium red bell peppers , cut into strips
2 tbsp rice vinegar
2 tsp fresh ginger root , peeled and grated
2 tsp sesame oil (dark)
0.25 tsp hot red pepper flakes , crushed
0.25 tsp black pepper


Directions
1 Toss cucumbers with salt and drain in strainer for at least 20 minutes.
2 In separate bowl, mix cucumbers with bell peppers.
3 In small bowl, whisk vinegar, ginger, oil.
4 Drizzle dressing over cucumber mixture and sprinkle with red and black pepper.
Additional Information
Serve with teriyaki chicken for an easy Asian inspired meal.
