Ingredients
2 large tomato , cut into wedges
1 olive oil cooking spray
1 small onions , finely chopped
1 serrano chili peppers , seeds and veins discarded, minced
1 medium garlic cloves , minced
1 pinch salt


Directions
1 Using a food processor or blender, puree tomatoes until finely diced.
2 Heat a cooking spray coated frying pan over medium heat. Cook onion, Serrano chili, and garlic 3 to 4 minutes or until soft.
3 Mix in tomatoes and bring to a boil. Simmer over medium high heat 5 to 8 minutes until thick. Sprinkle with salt. Serve warm.
Additional Information
Use the ripest tomatoes for the best flavor. Any hot chili can be used instead of Serrano.
