Ingredients
46 floz low sodium vegetable juice (V8 recommended)
4 cup fat free unsalted beef broth
61 oz Vegetables, garden medley, canned (4 cans mixed vegetables)
1 tsp Pinch of Herbs seasoning


Directions
1 Bring all ingredients to a boil over high heat in a large, nonstick soup pan.
2 If desired, mash soup in pot for a few minutes by hand with a potato masher to make soup a little thicker. Serve hot.
Additional Information
If you have time, you can make this soup using a crock pot. Mix all ingredients in a 6-quart or larger crockpot. Cook on low for 4 hours or on high for 2 hours.
