Ingredients
2 fresh green onions , chopped
1 whole jalapeno pepper , seeded and chopped
2 tbsp white wine vinegar
2 tbsp Worcestershire sauce
1 tbsp fresh ginger root , peeled and minced
1 tbsp vegetable oil
1.25 tsp ground thyme
1 tsp ground allspice
0.25 tsp salt
20 oz Sashimi, snapper, mixed species, fillet
1 fresh pineapple , cut lengthwise into 4 wedges or crosswise into 1/2 inch thick slices
2 tbsp brown sugar


Directions
1 Preheat grill.
2 In a medium bowl, mix the green onions, jalapeno chile, vinegar, Worcestershire sauce, ginger, oil, thyme, allspice, and salt until well mixed. Add snapper and coat well, let sit 5 minutes.
3 Rub pineapple slices with brown sugar.
4 Place pineapple and snapper on heated grill over medium heat. Place half of the remaining marinade on snapper. Grill for 5 minutes, turn over spoon remaining marinade on snapper and grill until opaque and pineapple is golden, 5 to 7 minutes.
Additional Information
Other fish like sole and flounder also work well with these flavors.
