Ingredients
1 lb raw medium shrimp , peeled
0.5 lb large scallops
6 oz mahi mahi fillets , about 1/2 inch thick (or other firm white fish)
0.75 cup chopped tomato , seeded
0.25 cup fresh cilantro , minced
3 tbsp shallots, chopped
2 tbsp fresh lime juice
1 tbsp sliced jalapeno pepper , minced, seeded
1 tsp salt
16 Lettuce, bibb, fresh, leaf, large


Directions
1 Steam shrimp and scallops 6 minutes or until fully cooked. Let cool and slice into fourths. Steam mahi mahi 8 minutes or until fully cooked. Let cool and slice into 1 inch pieces.
2 In a bowl, mix together shrimp, scallops, fish, tomato, cilantro, shallots, lime juice, pepper, and salt. Top each lettuce leaf with 1/4 cup mixture and roll to create packages.

Use whatever seafood is fresh and looks good.
