Ingredients
2 tbsp red wine vinegar
3 tsp olive oil
2 tsp dijon mustard
1 medium garlic cloves , minced
0.25 tsp salt
1 lb Sausage, turkey, Italian, hot, link, raw , cut diagonally into 2 inch pieces
4 cup salad greens , coarsely chopped
15.5 oz Beans, cannellini/white kidney, unsalted, canned , rinsed and drained
1 chopped green bell peppers , seeded and diced
0.5 red onion , finely chopped
2 tbsp pimentos , chopped


Directions
1 In a small bowl make the dressing by whisking together the vinegar, 2 teaspoons of the oil, mustard, garlic, and salt until well mixed; set aside.
2 Heat the remaining teaspoon of oil in a large nonstick pan over medium high heat. Add in the sausage and cook about 15 minutes, turning occasionally.
3 Remove sausage and place in a large bowl. Add the remaining ingredients into the bowl with the sausage, stir in the dressing, mix well, and serve.
Additional Information
If you prefer a milder flavor use sweet turkey sausage instead of hot.
