Directions
1 Coat a large nonstick skillet with cooking spray. Place over medium heat until hot. Add sausage, and cook until browned, stirring until it crumbles.
2 Drain and pat dry with paper towels. Set sausage aside. Wipe drippings from skillet with a paper towel.
3 Coat skillet with cooking spray, place over medium high heat until hot.
4 Add green onions, pepper, and potato. Cook, stirring frequently, 5 minutes or until green onions are tender.
5 Add cooked sausage, stir well.
6 Combine egg substitute and dressing mix, pour over vegetable mixture in skillet.
7 Cover and cook over medium low heat 12-13 minutes or until set.
8 Sprinkle with cheese. Cover and cook 2 minutes or until cheese melts. Cut into 6 wedges, serve immediately.
Additional Information
These are easy to make because all the ingredients are stirred in the eggs and cooked together.
