Servings
Ingredients
1 cooking spray
24 oz salmon fillet (4-6 ounce fillets, about 1-inch thick)
0.5 tsp salt , divided
0.25 tsp black pepper
1 tsp olive oil
1 tbsp Shallots, fresh , thinly sliced
1.5 cup fresh mushroom slices
16 oz fresh spinach leaves (2 cups)
1 tsp grated lemon rind
1 tsp fresh lemon juice


Directions
1 Heat a cooking spray coated frying pan over medium-high heat. Season both sides of fish with 1/4 teaspoon salt and pepper.
2 Lay fish in pan and cook 5 minutes per side or until fish is flaky. Take fish out of pan and set aside.
3 Cook oil and shallots in same pan for 1 minute. Mix in mushrooms and cook 2 minutes (do not stir). Cook another 2 minutes, stirring occasionally.
4 Mix in spinach and cook 30 seconds. Take off of heat and mix in remaining salt, lemon rind, and juice. Spoon sauce over fish.
Additional Information
Serve dish with thick crusty bread to soak up an extra spinach sauce.
