Ingredients
1 medium garlic cloves , minced
0.5 tsp salt , to taste (optional)
0.25 tsp black pepper , freshly ground
0.25 tsp ground cumin
1 cup plain yogurt, whole milk
0.25 oz fresh mint , chopped (or 1 tsp dried)
1 medium cucumber , cubed, seeded, and peeled
1.5 lb salmon fillet , skinless and boneless (4-6oz)
0.25 oz fresh mint (sprigs for garnish)
2 tsp olive oil
1 cooking spray


Directions
1 In small bowl, combine garlic, salt, pepper, and cumin. Smash with back of wooden spoon to create paste.
2 Mix in yogurt and mint. Gently mix in cucumber. Reserve.
3 Preheat grill to high. Coat grill rack with cooking spray.
4 Lightly brush both sides of salmon with olive oil. Place fish on grill rack. Cook 3 minutes per side or until desired degree of doneness.
5 When ready to serve, spoon cucumber sauce over fish or serve on side. Garnish with mint sprigs.
Additional Information
A grilling basket will help keep fish together.
