0.75 cup orange juice
1 tbsp rice vinegar
2 tbsp low sodium soy sauce
1 tbsp honey
1 tbsp fresh ginger root , cut into 8 slices (1 (1-inch) piece)
0.33 cup white all purpose flour
0.75 tsp salt
0.25 tsp black pepper
48 oz salmon fillet , skinned (8 (6-ounce) fillets, 1 inch thick)
1 tbsp olive oil
1 cooking spray
2 fresh green onions , chopped (optional)


Directions
1 Whisk together orange juice, vinegar, soy sauce, honey, and ginger in a pot and let boil. Cook 8 minutes or until sauce becomes thick. Take out ginger with a slotted spoon and throw away.
2 Preheat oven to 425 degrees F.
3 Mix flour with salt and pepper in a shallow dish. Cover salmon in mixture.
4 Pour oil in a frying pan heat over medium-high heat. Place salmon, 2 at a time, in oil and cook 4 minutes, on one side. Coat both sides of fish with orange sauce. Lay salmon seared side up on a foil covered, cooking spray coated baking sheet.
5 Roast salmon 4 minutes or until fully cooked. Top with green onions.
