Servings
Ingredients
0.25 cup fresh chives , finely chopped
2.5 tbsp extra virgin olive oil
1 cup chopped parsley
0.5 cup fresh cilantro , finely chopped
10 oz plain yogurt
1 fresh lemon juice, per fruit
1 medium cucumber , sliced thinly
24 oz salmon fillet (4 - 6 ounce fillets)
1 pinch salt and pepper


Directions
1 Preheat broiler and broiler pan.
2 In blender, purée chives and 1 tablespoon of olive oil. Transfer to small bowl and add cilantro, yogurt, lemon juice, and 1/2 cup chopped parsley.
3 In separate bowl, toss remaining chopped parsley and cucumber slices.
4 Spread herb sauce evenly on four plates and place cucumbers over the sauce.
5 Rub 1 tablespoon of olive oil into salmon fillets and season with salt and pepper
6 Remove pan from oven and spread remaining olive oil on it. Place fillets on pan and return to broiler positioning pan about 5" from heat.
7 Cook until salmon is golden brown, or about 5 minutes. Turn over and cook another 2 to 3 minutes.
8 Place one fillet, on each plate, on top of cucumbers and herb sauce.
Additional Information
Use a broiler pan instead of an oven-safe grill, if possible.
