1 Open can of salmon, drain, and put into a small bowl. 2 Mash up the salmon with a fork, including the skin and bones. 3 Mix in the egg, bread crumbs, mayonnaise, salt, pepper, and lemon juice. 4 Form mixture into 8 patties, about 1/2 inch thick each. 5 Place patties on a plate, cover with wax paper, and put in the refrigerator for at least 30 minutes (6 hours maximum). 6 When ready to cook, heat 2 teaspoons of oil in a large nonstick pan. 7 Cook patties until golden brown, about 8-10 minutes. Flip and cook the other side the same way.

This is a good recipe for the kid who won't eat fish, it doesn't look like fish and the breadcrumbs give it a good flavor.
