Ingredients

1 lb salmon fillet, poached
0.25 cup cracker meal
2 eggs, beaten
1.5 tsp crab cake seasoning, or any other seasoning of your choice
2 oz chia seeds


Directions

1 Preheat oven to 350 degrees F. Mix all of the ingredients together in a bowl. If the mixture is slightly dry, add a little bit of olive oil to moisten.
2 Form the mixture into equal size patties ( will make approximately 8). Spray the bottom of a baking dish with cooking oil. Place the salmon patties in the pan and bake for about 20 minutes or until golden brown.
3 To pan fry/saute, place patties in a large skillet. Add enough cooking oil to coat the bottom of the pan. Over medium-high heat, cook patties for about 8 minutes on each side.
