Ingredients
1 cup white wine vinegar
0.5 cup cold water
2 tbsp sugar
1 tbsp kosher salt
0.5 tsp mustard seed
0.25 tsp black pepper , finely ground
0.5 cup Wine, sake/saki, Japanese
3 cup fresh cauliflower , florets
1 medium yellow bell peppers , 1/4 inch thick slices (about 3/4 cup)
0.75 cup sliced carrots , diagonally cut
3 cup fresh broccoli florets
8 fresh green onions , white parts only
2 medium garlic cloves , thinly sliced


Directions
1 Add vinegar, water, sugar, salt, mustard seeds, and pepper to a pot; heat over medium-high heat and let boil for 3 minutes. Take off of heat and cool 2 minutes and mix in sake.
2 Add cauliflower, bell pepper, carrot, broccoli, onions, and garlic to a resealable plastic bag. Pour in sake mixture, seal, and chill 8 hours, flipping bag a few times. Take vegetables out of bag and throw away marinade.

Use any seasonal vegetables in this dish.
