1 Cream the margarine, 1/4 cup of confectioners sugar and vanilla together until light and fluffy. Mix in the flour and pecans. Chill for 2 hours. 2 When ready to cook preheat oven to 375 degrees F. Pinch off small pieces of dough and roll into 1-inch balls. Place on an ungreased baking sheet. Bake until lightly browned, about 10-12 minutes. Cool on a wire rack. 3 Roll in confectioners sugar before serving. Store in an airtight container.
