Directions
1 Preheat the oven to 400°F.
2 Place turkey in roasting pan with rack. Spread olive oil on turkey breast. Make sure turkey does not rest in its juices as it cooks.
3 In small bowl, mix lemon pepper and ground sage. Season turkey breast with sage mixture.
4 Put roasting pan in oven and cook for approximately 45 minutes. Reduce temperature to 300°F and cook for about 1-1/2 hours, or until a meat thermometer inserted in the breast reads.165°F.
Additional Information
Instead of roasting rack, place 6 foil balls under turkey breast to raise it off bottom of roasting pan.
