Ingredients
1 whole chicken, raw (3 1/2 to 4 pounds)
0.25 cup stoneground mustard
1 large garlic cloves , minced
1.5 tbsp fresh rosemary , chopped (or 1 1/2 teaspoons dried)


Directions
1 Preheat oven to 375 degrees F.
2 Wash and dry chicken. Lay chicken, breast side up on a foil covered roasting pan. Beginning at neck cavity, loosen skin from breast and drumsticks by inserting fingers, gently separating skin and meat. Mix mustard with garlic and rosemary and rub between skin and meat and on the surface.
3 Bake 1 hour and 10 minutes or until a meat thermometer reads at least 175 degrees F. Move the chicken to a serving platter and let rest 5 to 10 minutes before slicing.
Additional Information
Be sure to remove the skin before serving.
