Ingredients

2 tbsp olive oil
1 medium onions , sliced (about 1 cup)
2 medium garlic cloves , chopped
2 cup kale, chopped
2 cup chopped swiss chard
1 fresh leeks , chopped
3 cup low sodium chicken broth
1 medium potatoes , cut into bite size pieces
1 pinch salt , to taste (optional)
1 pinch black pepper , to taste (optional)
1 pinch dried parsley , to taste (optional)


Directions

1 In large saucepan, add olive oil and heat over medium. Add onion and garlic, sauté until soft, about 5 minutes.
2 Add kale, swiss chard, and leek. Cook additional 5 minutes.
3 Add chicken broth and potato pieces and bring to a boil. Add salt, pepper, and parsley, if desired, and simmer for about 10 minutes.
4 In batches, transfer soup to blender. Purée until smooth. Return to serving bowl.
