Ingredients
1.33 cup chopped tomato
0.5 cup sun dried tomatoes (packed without oil)
2 tbsp balsamic vinegar
1 tbsp olive oil
0.25 tsp salt
0.25 tsp black pepper
2 medium garlic cloves , peeled
0.75 cup cold water
16 cup romaine lettuce
1 medium cucumber , peeled and sliced
1 red onion , cut into 8 slices (1/4 inch thick)


Directions
1 Using a blender or food processor, puree tomatoes, vinegar, oil, salt, pepper, and garlic until smooth. Slowly drizzle in water with motor running and continue to process until smooth.
2 Combine lettuce, cucumber, and onion in a serving bowl and drizzle with half the dressing; toss gently to coat.
Additional Information
Use extra dressing as a marinade for chicken or fish.
