Ingredients
6 fresh plum tomatoes (about 1 pound)
3 medium garlic cloves , unpeeled
2 whole jalapeno pepper
0.33 cup fresh cilantro , chopped
0.25 cup fresh chopped onion
1 tsp fresh lime juice
0.25 tsp salt


Directions
1 Preheat broiler.
2 Lay tomatoes, garlic, and peppers on a foil covered baking sheet. Cook 16 minutes, flipping after 8 minutes.
3 Let vegetables cool; peel skin off. Using a mortar and pestle, mash garlic and peppers to make a paste. Mash in tomatoes. Mix pepper mixture with cilantro, onion, lime juice, and salt in a bowl.
Additional Information
Roasting tomatoes gives them a sweet and complex taste; rinsing onion under cold water makes it crisp; and crushing roasted garlic and chiles in a mortar releases their full flavor. Finely chopping the garlic and chile in a food processor then adding the tomatoes and pulsing the mixture until everything is coarsely pureed will yield great-tasting results as well.
