1 Preheat oven to 425 degrees F. 2 Slice tomatoes in half, lengthwise and lay, skin side up in a baking dish. Scatter garlic and red pepper overtop of tomatoes. Bake 40 minutes or until garlic is tender and tomato skins begin to become brown. 3 Take pan out of oven. Take off and throw away tomato skins. Mash the garlic and tomatoes using a fork. Mash in the olives, basil, vinegar, and salt.
Additional Information
Serve this sauce over pasta with fish or chicken, it makes a great compliment.
