Ingredients
3 lb fresh plum tomatoes (about 15)
3 medium garlic cloves , peeled
0.5 tsp hot red pepper flakes
8 oz pitted calamata olives , pitted and coarsely chopped
0.25 cup fresh basil , chopped (or 2 tablespoons chopped fresh rosemary)
1 tbsp balsamic vinegar
0.5 tsp kosher salt


Directions
1 Preheat oven to 425 degrees F.
2 Slice tomatoes in half, lengthwise and lay, skin side up in a baking dish. Scatter garlic and red pepper overtop of tomatoes. Bake 40 minutes or until garlic is tender and tomato skins begin to become brown.
3 Take pan out of oven. Take off and throw away tomato skins. Mash the garlic and tomatoes using a fork. Mash in the olives, basil, vinegar, and salt.
Additional Information
Serve this sauce over pasta with fish or chicken, it makes a great compliment.
