Ingredients
3 tbsp olive oil
1 lb sweet potatoes , unpeeled, cut into 2-inch chunks
1 lb potatoes, fresh, medium , unpeeled, cut into 2-inch chunks
4 medium garlic cloves , unpeeled
0.25 cup chopped parsley
1 tsp ground thyme
0.5 tsp black pepper
1 pinch salt (to taste)


Directions
1 Preheat the oven to 450 degrees F.
2 In a large roasting pan, mix the oil with the potatoes and whole cloves of garlic. Toss to coat.
3 Bake, shaking the pan every 15 minutes, until potatoes are browned and crisp and the garlic is soft, about 45 minute to 1 hour.
4 Take out the garlic, press the softened cloves, and slip from the skins, discarding the skin. Toss the potatoes with the garlic, parsley, thyme, pepper, and salt.
