1 Preheat the oven to 450 degrees F. 2 In a large roasting pan, mix the oil with the potatoes and whole cloves of garlic. Toss to coat. 3 Bake, shaking the pan every 15 minutes, until potatoes are browned and crisp and the garlic is soft, about 45 minute to 1 hour. 4 Take out the garlic, press the softened cloves, and slip from the skins, discarding the skin. Toss the potatoes with the garlic, parsley, thyme, pepper, and salt.
