Servings
Ingredients
1 tbsp olive oil
1 medium onions (sweet or white)
10 eggs
2 tbsp whole milk
0.5 tsp salt
0.25 tsp black pepper
3 oz roasted red peppers with brine , sliced (red or yellow)
0.5 cup grated Parmesan cheese


Directions
1 Preheat oven to 350°F.
2 In large nonstick, oven-safe skillet, add oil and onion.
3 Cook onions over medium until golden brown, stirring frequently, about 15 minutes.
4 In large bowl, whisk eggs, cheese, milk, salt, and pepper.
5 Pour egg mix into skillet covering onions. Gently scatter peppers across surface of eggs.
6 Cook 2 minutes. When edges begin firm, move skillet to oven.
7 Cook 15 minutes or until eggs puff and edges pull away from side of skillet. Remove skillet from oven. Let rest for 5 minutes.
8 Cut into 6 pieces. Serve.
