1 To roast garlic: Preheat oven to 350°F. Slice tops off garlic, wrap loosely in aluminum foil, bake for 20 to 30 minutes. 2 In large bowl, whisk eggs, water, mashed garlic, salt, and pepper. 3 In large, non-stick skillet, combine oil and butter. Heat over medium-high. 4 Pour egg mixture into heated skillet. 5 When eggs are set, fold omelet in half and remove from heat. 6 Transfer to serving dish. Sprinkle with red pepper flakes to taste. Cut into 4 pieces. Serve.
