1 Preheat oven to 450°F. 2 In large bowl, whisk lemon juice, oil, salt, cumin, coriander, cumin, and red pepper. Add cauliflower and bell peppers. Toss to coat well. 3 Arrange vegetables in one layer on baking sheet. Roast 15 minutes, remove from oven. Toss. Return to oven for additional 10 minutes. 4 Remove from oven, allow to cool. Add cilantro and toss to mix well.. 5 Thread 1 cauliflower floret and 1 bell pepper piece on each of 30 skewers.
