Ingredients
1.25 lb Broccoli Rabe, fresh
8 oz Greens, radicchio, fresh (1 head)
1 medium lemons
2 tbsp olive oil
1 oz Bacon, cured, lower sodium , chopped (or pancetta)
0.25 tsp salt
1 pinch black pepper


Directions
1 Preheat oven to 400 degrees F.
2 Wash and dry broccoli rabe and slice into 2 inch pieces. Wash and dry radicchio and slice into 1/2 inch thick pieces. Wash and dry lemon and slice in half lengthwise and thinly slice crosswise, throwing away ends and seeds.
3 Combine broccoli rabe, radicchio, lemon pieces, olive oil, bacon, and salt in a baking pan. Move half the mixture to another baking pan and spread evenly.
4 Bake mixtures 10 minutes or until vegetables are soft and wilted; season with salt and pepper.
Additional Information
Spinach is a good substitute for the broccoli rabe and arugula is a good substitute for radicchio.
