2 lb round eye roast, lean
0.5 tsp onion powder
0.5 tsp garlic powder
0.75 tsp salt , to taste (optional)
0.5 tsp black pepper
1 tbsp cornstarch
1 pinch paprika


Directions
1 Preheat oven to 350°F.
2 Season roast with garlic powder, onion powder, paprika, pepper, and 1/2 teaspoon salt. Place on rack in baking pan,
3 Bake 1-1/4 hours or until internal temperature reaches 150°F.
4 Remove from oven and transfer to cutting board. Allow to cool for 10 minutes.
5 Pour juices from cutting board and baking pan into pyrex measuring cup.
6 Add water to measuring cup to make one cup total of liquid. Pour into saucepan.
7 Add cornstarch and 1/4 teaspoon salt. Whisk until cornstarch dissolves completely.
8 Bring mixture to boil over high heat. Reduce heat to low, stir frequently until thick.
9 Slice roast and serve with gravy.
