1 tsp ground thyme
3 medium garlic cloves , minced
0.5 tsp salt , to taste (optional)
0.5 tsp black pepper
1.25 lb extra lean beef tenderloin , trimmed
1 cooking spray


Directions
1 Preheat oven to 350°F.
2 In small bowl, mix thyme, garlic, salt, and pepper. Rub mixture over beef.
3 Coat large skillet with cooking spray and heat over medium-high. Place beef in pan and cook 2 minutes on each side or until brown.
4 Move skillet to oven and roast 20 to 25 minutes or until a meat thermometer reads at least 125°F.
5 Remove beef from oven and transfer to cutting board. Loosely cover with foil and let rest 10 minutes before serving.
