2 cup fresh strawberries , quartered
1 tbsp grated orange peel
3 tbsp sweetener (sugar substitute)
1.25 cup fresh sliced strawberries
4 cup fat free ricotta cheese
2 tbsp pistachios
1 pinch fresh mint , for garnish (optional)


Directions
1 In food processor/blender, combine the quartered strawberries, orange peel, and sugar substitute and blend until smooth. Pour into a large bowl. Gently stir in the sliced strawberries. Cover and chill.
2 Before serving, evenly divide the ricotta among 4 serving bowls. Pour equal amounts of the strawberry mixture over the ricotta, then sprinkle with the pistachios. Garnish with the mint leaves.
Additional Information
Serve well chilled.
