1 Preheat oven to 350 degrees F. 2 In a bowl mix the rhubarb and sugar and set aside for 10-15 minutes. 3 In a large bowl, mix together the flour, baking powder, baking soda, salt, and zest. Add in walnuts. 4 In a separate bowl, mix the oil, egg, juice, and vanilla with an electric mixer until combined, stir in rhubarb mixture. 5 Pour entire rhubarb mixture over dry ingredients and stir until just combined, then spoon into cooking spray coated 9 x 5 inch loaf pan. 6 Bake until toothpick inserted in the center comes out clean, about 70-80 minutes. 7 Remove pan and cool for 10 minutes, then remove bread from pan and cool completely.
Additional Information
You could use pecans instead of walnuts and lemon zest instead of the orange zest for a change.
