Ingredients
1 cauliflower, medium head , broken into florets
0.5 cup fresh chopped celery
0.5 cup reduced fat Italian dressing
2 medium garlic cloves , minced
0.25 tsp salt
0.25 tsp black pepper
0.25 tsp hot red pepper flakes


Directions
1 In a medium saucepan, combine the cauliflower with water to cover. Cover and bring to a boil and then cook for 4 to 5 minutes until tender. Drain.
2 Mix the cooked cauliflower with the celery in a medium bowl.
3 Separately, combine the dressing, minced garlic, salt, and pepper, and stir well. Pour the dressing mixture over the salad and toss gently.
4 Sprinkle red pepper over the top of the salad.
Additional Information
This salad is best served when refrigerated for at least 2 hours before serving.
