1 Using a food processor or blender, process tomatoes, onion, chili, and garlic until finely chopped.

Variation: Substitute green bell pepper for the poblano chili and add 1/4 cup crumbled fat-free feta cheese, 1/4 teaspoon dried oregano leaves, and 1/4 teaspoon red pepper flakes.
