Ingredients
1 lb red snapper
1 olive oil cooking spray
4 tsp low sodium soy sauce
0.25 tsp ground ginger
1 tbsp olive oil
2 medium bell peppers , julienned (one red and one green)
4 oz fresh mushroom slices ,


Directions
1 Preheat broiler. Place snapper in a cooking spray coated shallow baking pan.
2 Combine soy sauce and ginger; brush over fish. Place under broiler and broil about 8 to 10 minutes or until fish tests done.
3 Meanwhile, heat oil in a large nonstick skillet. Cook peppers and mushrooms until just crisp-tender. Serve with or over the snapper.
