1 Preheat the broiler. Broil the peppers until the skin is slightly blackened, turning a few times to broil both sides. Transfer the peppers into a paper bag and seal.
2 Let the peppers cool for 5 minutes. Trim the tops off then seed and peel.
3 Put the peppers, apple juice, garlic, salt, and pepper in a blender. Pulse to a puree.
