Ingredients

4 boneless skinless chicken breasts
1 tbsp olive oil
1 medium garlic cloves , minced
1 medium shallots , minced
1 red onion , sliced thin (small)
1 tbsp thyme, leaves, ground
1 pinch black pepper , ground (to taste)
1 pinch salt (to taste)
1 cup Polaner Sugar Free with Fiber Seedless Raspberry Preserves


Directions

1 Heat oil in saute pan. Add garlic, shallots, onion, pepper, and thyme.
2 Saute 5 -10 minutes until onion is translucent. Remove from pan and set aside.
3 Season chicken breast with salt and pepper and add to the same pan.
4 Saute until slightly browned on both sides 10 to 15 minutes.
5 Remove chicken then return onion mix into same pan and add Polaner Sugar Free with Fiber Raspberry Preserves; stir to mix.
6 Return chicken and simmer in mix 2 minutes.
Additional Information
Serve with brown or wild rice.
