Servings
Ingredients
1 medium shallots
1 tsp fresh thyme
0.5 cup vinegar (raspberry)
0.25 cup red wine vinegar
0.5 cup extra virgin olive oil , plus 2 tablespoons
0.5 tsp sugar , more to taste
0.5 tsp salt and pepper , more to taste


Directions
1 Chop the shallots coarsely and place in a food processor. Add the thyme and mince.
2 Add both the raspberry and red wine vinegar and blend. Slowly add the olive oil and continue to blend.
3 Add the sugar, salt and pepper and adjust the seasonings according to taste.
Additional Information
Oil and vinegars do not naturally blend together, so you need to vigorously beat the mixture with a whisk or shake in a covered jar.
