Directions
1 Mix together the gelatin and cold water. Set over hot water to dissolve. Mix in the raspberries, yogurt, and vanilla. Place in refrigerator to chill.
2 Beat the egg whites then mix in the fructose. Beat until peaks form. Fold into the raspberry mixture. Refrigerate until set.
3 Transfer into parfait glasses and sprinkle almonds on top, if desired.
