1 In large mixing bowl, mix cold water with gelatin. Let sit for 2 minutes. 2 Stir. Add the boiling water. Whisk until the gelatin is completely dissolved. 3 Divide mixture between two 8" x 8" glass baking dishes. 4 Add the raspberry lemonade powder to one dish. Whisk to dissolve. Let stand for 15 minutes to cool. 5 Add the lemonade powder to second dish. Whisk to dissolve. Let stand for 15 minutes to cool. 6 Cover both dishes with plastic wrap. Refrigerate 5 hours or until firm. 7 Cut each dish of gelatin into 1" cubes. 8 Arrange layers of lemonade and raspberry lemonade cubes in each of 4 martini or white wine glasses. 9 Top each with a raspberry, if desired. 10 Serve immediately or cover with plastic wrap and refrigerate for up to 3 days.
