Quesadillas
4 oz fat free cream cheese , softened
2 oz goat cheese
0.5 whole jalapeno pepper , minced
0.5 tsp marjoram, leaves, ground
0.5 tsp thyme, leaves, ground
0.12 tsp white pepper
8 whole wheat tortillas (6-inch)
1 Cooking Spray, canola, non-aerosol, butter flavor, 1/3 sec spr

Tropical fruit salsa
0.5 cup fresh diced pineapple , cubed
0.5 cup Tomatoes, red, fresh, year round average, chpd/sliced , cubed
0.5 cup Mango, fresh, slices , cubed (or papaya)
0.25 cup low sodium canned black beans , drained
0.25 cup Cucumber, with skin, fresh, slices , seeded
0.5 tsp sliced jalapeno pepper , seeded
2 tbsp fresh cilantro , finely chopped
0.25 cup orange juice
1 tbsp fresh lime juice
2 tsp sugar


Directions
1 In a medium-size bowl, combine cream cheese, goat cheese, jalapeno chili, herbs, and white pepper. Spread 3 tablespoons mixture on each of 4 tortillas. Top with remaining tortillas.
2 Cook 1 quesadilla in lightly greased skillet on medium to medium-low heat until browned on the bottom, 2 to 3 minutes. Spray top of quesadilla with cooking spray; turn and cook until browned on the bottom.
3 Repeat with remaining quesadillas. Cut quesadillas into wedges; serve warm with Tropical Fruit Salsa.
4 To make Tropical Fruit Salsa, combine cubed pineapple, tomato, mango, black beans, cucumber, jalapeno, cilantro, orange juice, lime juice, and sugar.
