1 Preheat the oven to 375 degrees F. Grease or line a muffin pan. 2 In a blender or with a hand mixer, thoroughly blend the oil, syrup, egg and pumpkin in a medium sized bowl. Set aside. 3 In another bowl, sift the flour, baking soda, salt, and spices. Add to the blended mixture and stir gently to form a thick batter. 4 Immediately spread the batter into the prepared muffin tins. 5 Bake in the oven for 20 minutes or until a tester comes out clean. Cool in the pan 10 minutes, then turn out onto a rack.
