1 oz prosciutto
0.25 cup fresh chopped onion
1 tsp olive oil
1 cup Peas, garden, frozen
0.25 cup low sodium chicken broth
0.25 tsp ground oregano (optional)
1 pinch black pepper
1 oz pine nuts , toasted (or chopped pecans)


Directions
1 Cut prosciutto into thin strips.
2 In medium saucepan, heat oil over medium. Add onion and cook until tender.
3 Stir in peas, chicken stock, oregano, prosciutto, and pepper.
4 Cover and simmer 4 - 5 minutes, or until peas are tender.
5 Stir in toasted pine nuts, serve.
