Ingredients
0.25 cup chopped red bell peppers
0.25 cup fresh chopped green onion
2 cup frozen hash browns
0.5 cup roasted lean ham, diced , chopped
1.5 cup liquid egg substitute , such as Egg Beaters
2 tbsp chopped parsley (or tarragon or 1 tsp dried)
2 tbsp fat free half and half
0.5 tsp salt
0.25 tsp black pepper (or white)
0.25 cup Cheese, cheddar, mild, reduced fat, shredded


Directions
1 Coat an oven proof skillet with fat free cooking spray and heat over medium heat.
2 Add the red pepper and green onions and cook until tender, approximately 4 minutes.
3 Add the potatoes, cover, and cook 10 minutes more, stirring frequently.
4 Stir in the ham and cook until heated through, about 2 minutes.
5 In a medium bowl whisk together the egg substitute, tarragon or parsley, half and half, salt, and white or black pepper. Set aside.
6 Preheat the broiler.
7 Pour the egg mixture into the skillet and cook, stirring occasionally to let the uncooked egg reach the bottom of the pan.
8 Cook until the bottom is set and the top is still somewhat loose, 5 to 8 minutes.
9 Sprinkle with cheese and run the skillet under the broiler until puffy and the cheese is lightly golden, approximately 1 to 2 minutes.
Additional Information
You can use whatever ham you like in this dish. Chopped ham steak, chopped canned ham or even reduced-fat breakfast sausage all taste great.
