Ingredients
6 oz fresh jalapeno chili peppers , stemmed, seeded, deveined, and chopped
8 oz canned red bell pepper halves, with liquid
3 lb Pork, chop, sirloin, lean, raw (cut about 1in. thick)
1 tsp olive oil
1 medium onions , finely chopped
2 medium garlic cloves , minced
0.75 cup white wine
1 tbsp chopped parsley
1 pinch salt
1 pinch black pepper


Directions
1 Preheat oven to 375 degrees F.
2 Using a food processor or blender, puree chilies and red peppers until finely chopped.
3 Wash and dry pork.
4 Pour oil in an oven-proof skillet and heat over medium heat.
5 Sauté onion and garlic 8 to 10 minutes then spoon onion mixture into a bowl and set aside.
6 Arrange pork chops in skillet and cook 3 to 5 minutes per side until browned.
7 Mix in onion mixture, pureed jalapeno mixture, and wine.
8 Place lid over pan and bake in preheated oven 1 1/2 hours or until meat is very tender and falls easily off the bone.
9 Remove lid, stir, and cook another 10 minutes until sauce becomes thick.
10 Move pork to a serving platter and serve with sauce. Top with parsley, salt, and pepper.
Additional Information
Add more or take away some jalapenos, they will add a lot of heat.
