1 Trim fat from meat. and cut meat crosswire in half. 2 Place each piece of meat, cut side down, between two pieces of plastic wrap. With the flat side of meat meallet, pound lightly working from center to edge. Pound to a 1/2 inch thickness. 3 Remove plastic wrap and sprinkle with pepper and thyme. 4 Lightly coat a large nonstick skillet with cooking spray. Heat over medium heat. 5 Add meat to skillet and cook for 6 to 8 minutes or until meat is barely pink in center, turning once. 6 Remove meat from skillet. Keep drippings. Cover meat and keep warm. 7 Add onion to the drippings in skillet and cook about 4 minutes or until onion is tender, stirring occassionally. 8 Stir in the apples, water, vinegar, sugar, cumin (if desired), and salt. 9 Bring to a boil. Gently boil, uncovered, for 4 to 5 minutes turning apples and onions occassionally. 10 Return the meat to the skillet and heat thoroughly.
